Seared Tuna & Spinach Pinwheels
THIS IS HOW YOU DO IT!
Marinate pan-seared fresh Peppered Tuna, sliced and layered on five rolled and flattened Garlic Butter bread squares. Add fresh Spinach leaves, spread a thin layer of fresh Honey over the bread and cut into 4-5 pieces each. Place on a serving platter sprinkle with fresh grated Parmasean Cheese, and top with baked Bacon Bits. Delicious small pieces, with Big flavor! This recipe makes approximately 20 pinwheels, depending upon thickness of each one.

BBQ Chicken in Puff Pastry Pinwheels
THIS IS HOW YOU DO IT!
Smokey Honey Barbecue Chicken simmered for 4 hours to really make these tender bites. Spread the chicken inside 5 thin layers of toasted Puff Pastry and roll up into a tube. Slice into 1-inch thick pieces. This recipe makes approximately 6 BBQ Puffs per each cup of Honey BBQ Chicken mixture. Set pieces on a platter and garnish. It makes approximately 20 pinwheels, depending upon thickness of each one.

Grilled Lemon Herb Shrimp Pinwheels
THIS IS HOW YOU DO IT!
Prepare a bowl of 1/4 cup of Olive Oil, 2 Tbsp. of fresh squeezed Lemon Juice, and 2 Tbsp. of crushed Basil, Dill, Garlic and Parsley leaves. Mix well and brush over 1 lb. of peeled and deveined, medium-sized Shrimp in a large Sauté pan. Cook 2-3 minutes until fully cooked, continually turning and brushing the herbs on the shrimp. Remove the shrimp from the pan after they turn pink, so they do not overcook. Spread the Herb Shrimp on 4 round Tortillas or square Flatbread. Roll into a tube and cut into 4-5 pieces.

Tender Ribeye in Sour Dough Bread Pinwheels
Ingredients:
> 1 12-ounce Ribeye steak
> 1 cup of fresh Spinach
> 1/2 small carton of Cherry Tomatoes (10-12)
> 1 cup of guacamole
> 1 Tsp. of spicy mayo.
> 3 squares of thin sour dough flat bread (6 in. x 6 in. )

Marinade the Ribeye for no less than 15 minutes with your favorite. Make sure meat is room-tempature BEFORE you start. Add sasoning (We recommend garlic and pepper), and place on a hot grill at 300+ degrees (3-5 minutes on each side for rare, and 10 minutes on each side for a medium-well steak) Continued below………………

Slice the Cherry Tomatoes and Spinach and mix with guacamole and spicy mayo. Spread mixture on flat bread squares. Cut thin slices of Ribeye and add layers to bread squares. Roll each square tightly into a tube. Then cut into 4 to 6 one-inch thick pinwheels. Recipe makes 12-18 Pinwheels, depending upon thickness of each one.

Ingredients:

> 1 cup fresh Spinach, finely chopped
> 8-10 Cherry Tomatoes, quartered or chopped
> 1/2 Tbsp. Cayenne Pepper, to sprinkle on shrimp and in Lemon mixture
> 1 ounce of Lemon Juice, mix with Cayenne and Mayonaise
> 1 Tbsp of Mayonaise or Ranch Dressing (mix with Lemon Juice)
>4 Six-inch soft flour Tortillas (no cooked)
THIS IS HOW YOU DO IT!
Mix the cubed Avocado, Spinach and Tomatoes and spoon into a mixture of Lemon Juice, Cayenne Pepper and Mayo. Mix well. Spread on four 6-inch Tortillas. Spread the cooked shrimp on Tortillas and sprinkle remaining Cayenne Pepper. Roll stuffed tortilla into a tube and slice into 4 to 6 Pinwheels. Place pieces on serving platter and garnish (Spinach or other). With a toothpick, top each Pinwheel with one shrimp for visual pleasure.

Tender Ham & White Cheddar Pinwheels
Ingredients:
> 1 lb. Thinly sliced Ham
> 8 ounces of White or Cheddar Cheese block, thinly sliced
> 1 cup fresh Spinach, chopped
> 8-10 Cherry Tomatoes, halved, to garnish on top
> 2 Tbsp low-sugar Apple or Berry Jelly, mix with softened Creme Cheese
> 8 ounces of Creme Cheese, mix with Jelly

Mix the Apple or Berry Jelly and softened Cream Cheese until creamy. Spread a thin layer on the four 6-inch Tortillas. Layer the ham slices and turkey (4 layers per roll). Roll up the stuffed tortillas into a tube. Cut into 4 to 6 Pinwheels. Place pieces on serving platter and garnish with a dollop of Creame Cheese mixture. With a toothpick, skewer each Pinwheel with Tomato half and Spinach leaf. Recipe makes 16-20 Pinwheels (feeds 3-4 people)

Roasted Vegetables Pinwheels
This recipes allows for customization based upon your preference. Feel free to experiment with different flavors and dressings to enhance the flavor.
> 2 lbs. various Roasted Vegetables of your choice, sliced, chunked, or diced
> 2 ounces of Ranch dressing, Mayonnaise, Mustard, or condiment of choice
> 1 ounce of Olive Oil
> 2-3 Tsp of your favorite powdered or crushed seasonings (salt, pepper, Tumeric, Mint, etc.)
> 4 Six-inch soft flour bread squares, spread mixture and roll up, slice.
THIS IS HOW YOU DO IT!
Set your oven broiler to 350 degrees while you clean, dice, slice and sauté fresh vegetables in olive oil on the stove, just enough to soften. Spoon veggies into a roasting pan and broil (or throw them on an outdoor grill) for about 10 minutes. Once roasted (somewhat soft-somewhat crispy), mix the veggies in a small amount of olive oil or your favorite dressing. This keeps the mixture from falling out of the Pinwheel while eating. Add seasonings as desired. Then spread a layer of the mixture on each Tortillas. Roll up the stuffed tortillas into a tube. Cut into 4 to 6 Pinwheels. Place pieces on serving platter and garnish with a Spinach leaf or sprig of Mint. Recipe makes 16-20 Pinwheels (feeds 3-4 people)

A New Take on Delicious Bites!
Italian Sausage Pizza Stuffed In Thinly-Sliced Flatbread Pinwheels, for a Crowd!
THIS IS HOW YOU DO IT!
It is difficult to make just a “little” marinara sauce. So let the party begin! Mix a hearty slow-cooked Marinara sauce and pan-cooked Italian Sausage (cooked in Olive Oil and strained). Let it simmer for about 30 minutes to 1 hour.
Select the loaf of French Bread and slice long-ways into 4 thin oblong flatbreads. Cut these 4 long pieces into 3 sections to make 12 squares. Take a rolling pin and steamroll the bread, flattening out to a thin layer. Brush a mixture of Garlic and Butter (or Olive Oil) on top of each square. Then turn over the squares so the garlic butter side is facing down. Spread the Sausage Marinara sauce onto each square, like a flat bread pizza, leaving the edges clean. The sauce will spread to the edges while rolling. Add a layer of fresh Spinach and sprinkle with finely graded Mozzerella or Parmasean cheese.
Then, Roll the stuffed flatbread into a tight, long tube and and slice into 1-inch width Pinwheels. For 12 squares of flatbread, the recipe makes about 50-60 perfect bite-sized treats. Choose your favorite Dipping Sauce and enjoy a different take on pizza!
RECOMMENDED PARING: Nothing taste better with pizza than a nice cold craft beer or hearty red wine
Smoked Salmon Medallions and Tarter Sauce Pinwheels
To make this fresh recipe, choose a 12-ounce smoked salmon and season as desired.
Slice salmon longways into 6-inch long, thin layers. Filling includes a Creme Tarter sauce. Use about 1 Tbsp. of Tarter for each roll. Lay out 3-4 flat tortillas and spoon the tartar sauce, then the long pieces of sliced samon, to top each roll.
Roll up the tortillas tightly into long tubes and slice into 5-6 pieces per roll. Place on a cool serving platter and savor the flavor. This recipe makes about 30-45 Pinwheels (6-8 people)
RECOMMENDED PARING: Pairs well with white or rose’ wines, Pale Ales, or white spirits like The Power Mule, and NA Vodka, Rum or Gin
Chocolate & Banana Pinwheels
In a pan cook 4 Tbsp. cocoa in 8 oz. of butter, 2 Tbsp of local Honey, and 4 ounces of cream cheese until melted and smooth. Stir constantly so it does not burn. This makes the chocolate filling. Heat oven 350 degrees 3-4 flat squares of puffed pastry, flat bread, or even biscuit dough, and cook for about 15 minutes, until lightly browned, then cool completely.
While it is cooling, remove the skin from 4 bananas. Spread a thick layer of the Chocolate mixture onto the bread squares and add one whole banana to each square. Roll up the bread squares into long tubes around the banana, then slice the tubes into 5-6 pieces per roll. Place on a serving platter and Enjoy your healthy sweets. For a sweet Banana Foster flavor, add maple syrup or caramel, instead of the chocolate mixture. Sprinkle with powered sugar or a few chopped peanut chips.
